Light Years Fermentation is an independently owned brewery, NYS farm cidery, and pizza shop in Endicott, NY built around a love for fermentation, old world brewing traditions, and bringing people together.
Everything we make is produced on-site using our own well water, from small-batch beers and wild fermented ciders to long fermented pizza dough and house made food specials. Our beer and cider program is heavily inspired by traditional European brewing and fermentation techniques, with many of our ciders and mixed fermentation beers shaped by our house Belgian yeast culture and long conditioning times.
Pizza is just as important to us as beer. Our dough is fermented for several days to develop flavor, texture, and character before being baked into the style of pizza we’ve spent years refining and obsessing over.
Our kitchen is rooted in the same philosophy: make things from scratch, use quality ingredients, and serve food we genuinely love to eat ourselves. From flame grilled spiedies marinated in-house, to Italian roast pork, rotating specials, fresh baked desserts, and seasonal offerings, we care deeply about the details.
More than anything, we wanted to create the kind of place we would want to spend time in ourselves, relaxed, welcoming, a little nostalgic, and centered around good food, good drinks, music, conversation, and community.

Jeff was more than a best friend, he was Light Years' biggest supporter and a constant source of joy. His unwavering belief in us and his incredible spirit continue to guide everything we do.
